A season, a summer, and two different businesses
Broward runs a genuine high season from roughly November through April and a summer that can sit forty percent below it. Unlike Miami, Fort Lauderdale's off-season is cushioned by a large local resident base and a strong cruise and marine calendar — which is exactly why operators here misjudge it. The room does not empty, it just quietly stops covering its fixed labor, and that is harder to notice than a dead dining room.
Las Olas and the beach corridor price and staff for visitors; Wilton Manors, Victoria Park and the inland neighbourhoods run on regulars with a lower check and much higher frequency. Those are two different beverage mixes, two different menu lengths and two different labor curves, and the pattern we most often correct is a neighbourhood room operating a beach-corridor cost structure.
Boat show, cruise turnarounds and event weeks produce single days that can equal a normal week. Rooms without a purchasing and rostering calendar built against those dates either run out of the high-margin items or carry the inventory into a quiet fortnight.
Where the margin usually is in Broward
A two-season operating plan first. Peak and summer get separate menus, separate rosters and separate purchasing pars, written in advance rather than improvised in May. This is the change that most reliably turns a break-even summer into a contributing one.
Then beverage. Fort Lauderdale drinks, and outdoor and dockside service makes measurement harder — unrung comps, free-pour at a service bar out of sight of the POS, and a well tier that crept up without the price following. Measurement and well-tier discipline are usually worth two to three points of prime cost here.
Then labor cost against Florida's rising minimum wage. The scheduled annual increases have permanently changed what a Broward roster costs, and rooms that respond by cutting hours rather than restructuring the schedule lose service quality and the staff at the same time. We rebuild the roster on sales per labor hour by daypart and fix the prep model so a smaller skilled core can carry it.
Then seafood and produce cost volatility. Menus that are heavy on items with unstable landed cost need either a contribution-margin buffer built into the price or a rotating specification, not a fixed price set at last season's cost.
