What Texas operators are dealing with
Texas has been one of the fastest-growing restaurant markets in the country, and growth cuts both ways. Rents in the strongest Dallas and Austin corridors have moved faster than check averages, new competition opens quarterly, and the labor market for experienced kitchen leadership stays tight. Operators who were comfortable at 62 percent prime cost three years ago are frequently running north of 68 today without having changed a thing.
The other Texas-specific pressure is scale. A lot of independents here get to two or three locations quickly because the real estate and the demand allow it, then discover the first site's margin depended on the owner standing in it. Site two exposes every cost that unpaid owner labor was hiding.
How we work here
Financial, menu and labor analysis happens remotely; service observation, kitchen flow and team training happen in your building during real trading hours. Being based in the state means on-site days are practical rather than an expense line, including multi-day training blocks and follow-up visits after a project closes.
