The most seasonal market we work in

Asheville's peak-to-trough swing is wider than any city on our list. October leaf season and the summer months can run three to four times a January or February week, and the winter months are not a soft patch — they are a survival period that has to be funded out of the peak. Operators who take their annual margin from a twelve-month average and staff accordingly are the ones who run out of cash in the first quarter.

A downtown or Biltmore Village room may run seventy percent visitors in peak and thirty percent in winter, and those two guests behave differently: visitors order more beverage, are less price-sensitive, and are far less forgiving of a wait. The menu and the roster that work in October are not the ones that work in February, and both need to be written in advance.

The third is the beer economy. The South Slope's brewery density sets guest expectations for what a drink costs and what a food menu next to it should look like. Restaurants competing for the same evening without a brewery's beverage cost structure need a clearly different offer, not a slightly cheaper version of one.

Where the margin usually is in Asheville

Under North Carolina's ABC system spirit pricing is fixed, so pour measurement and menu mix are the only levers that exist.

Then labor retention through the shoulder. The operators who keep their best staff are the ones who publish a winter plan in advance — reduced but guaranteed hours, cross-training, or a genuine seasonal close — rather than cutting shifts week by week and losing the kitchen by December.
