Why we read covers against contribution

When we analyze an establishment, covers are the first number everyone wants to talk about. They are also the easiest number to move in the wrong direction. Discount deeply enough and any room fills; the cost of that fill rarely shows up in the same conversation.

We look for the margin behind the cover. What is the contribution per guest after food, beverage and direct labor? Where does the check average sit against the format's realistic cost structure? A restaurant holding prime cost near sixty percent is healthy; one drifting past seventy is often buying volume with its own margin.

Our weekly review reads covers, check average and prime cost together. A busy Saturday without the margin beside it is only half the story. The operators we work with longest are the ones who stop celebrating a full room and start asking what each seat actually contributed.
